The Fairmont Monte Carlo unveils stage II of its 45-million makeover.

The Monaco shipyards are preparing to deliver one of their most beautiful creations with the completion of its spectacular 45-million-euro refurbishment of the hotel Fairmont Monte Carlo. This is the ideal opportunity to offer you a dazzling cruise through all the pleasures of the Mediterranean and the Principality aboard this new boat filled with light and luxury.

New 7th Floor, 7th Heaven
At the Fairmont Monte Carlo, we’re celebrating spring with the inauguration of our top, 7th floor terrace. It’s a 7th heaven with a 360° view over the Principality’s legendary Opera House, Prince’s Palace, and Casino – against a backdrop of the renowned Riviera and the azure splendour of the Mediterranean.

In this 7th heaven, between sky and sea, we’ve created an original, new-concept restaurant, L’Horizon. It is nothing less than affirmation of the hotel’s and the Fairmont Hotel and Resort chain’s commitment to the health of our planet and sustainable development, proof that pleasure and eco-respect are synonymous. In fact, we’ve adopted a defining phrase for our new restaurant: chic & ethic.

Our Executive Chef, Maryan Gandon, is committed to privileging locally-produced food. This is why the Fairmont cultivates its own gardens in the fertile countryside just outside Monaco. By growing its own fruits and vegetables, the Fairmont Monte Carlo is not only producing the best of local fare for in-and-out-of-season enjoyment, it is reducing carbon emissions caused by long-haul transport. We’ve even influenced our suppliers. In fact, hotel’s suppliers have been called upon to revise their packaging techniques and to reduce the frequency of their deliveries.

And there’s more :
-every object, apparatus, paper and merchandising tool – our staff uniforms and menu cards are visible examples – come from an eco-friendly production.
-in partnership with the Oceanographic Museum of Monaco and in adherence to the Museum’s guidelines, Chef Gandon and his team use only non-endangered species in the Fairmont cuisine. For example, vulnerable species like the red tuna are not on our menus.

New concept : Chic & Ethic

Not only will Fairmont guests be able to wine and dine in our L’Horizon restaurant throughout the entire day, until midnight, they will have especially-conceived access from the restaurant to an exclusive Lounge created for private events and cocktail parties. Naturally the view from the lounge takes in the entire sweep of the Riviera.

Our brand new Willow Stream fitness has left nothing to chance and is the ideal place to be while working out in front of the Riviera :
-High tech ‘Technogym’ equipment with reduced energy consumption and easily recyclable material

Whether guests prefer a lean carry-on or just want a private workout, staying fit at Fairmont is just a phone call away. All guests that are members of our loyalty program, President Club, can order Adidas shorts, t-shirts and athletic shoes, all delivered to the guestroom, for use during their stay. In addition, guests are provided with pre-loaded Creative Zen mp3 players to use during their workout. In collaboration with EMI Music, Fairmont has compiled extensive play lists that include a variety of contemporary, classical, rock and easy listening music, suitable for running, walking and lounging.

New Pool
For greater guest pleasure, we’ve given our roof-top swimming pool a new look. From here, our guests can gaze out on the Mediterranean Sea, Monte-Carlo’s Belle Époque Opera and Casino and the celebrated Fairmont Monte Carlo Grand Prix hairpin curve, the most challenging in the Formula 1 Championship.
